Ingredients
  

  • 1 whole Olagud probiotic chicken about 1 kg
  • 100 g unsalted butter
  • 5 cloves garlic minced
  • 1 lemon
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp olive oil
  • Baby potatoes
  • Carrots
  • Onion

Method
 

  1. Rinse the chicken, drain well, and pat completely dry with paper towels so the seasoning adheres properly.
  2. In a skillet over medium heat, melt the butter and cook until it turns golden brown and fragrant, stirring gently.
  3. Combine the brown butter with minced garlic, lemon juice, rosemary, thyme, salt, pepper, and olive oil. Mix well, then brush over the entire chicken—including under the skin and inside the cavity.
  4. Preheat the oven to 190°C. Place the chicken on a baking tray with the baby potatoes, carrots, and onion. Roast for about 50–60 minutes, or until the chicken’s internal temperature reaches 75°C.
  5. Remove from the oven and rest the chicken for 10 minutes before carving. Serve warm with the roasted vegetables.

Notes

Choose quality chicken: Use Olagud probiotic chicken or a fresh whole chicken of excellent quality—flavor and texture start with your main ingredient. Probiotic chicken is notably tender, juicy, and naturally flavorful.
Don’t overcook the butter: Watch the color closely when making brown butter. It only takes a short time; letting it go too long will burn the milk solids and turn the flavor bitter.
Allow time to marinate: Let the chicken sit with the seasoning for at least 15–30 minutes before roasting.
Keep the oven temperature steady: Roasting at about 190°C helps the chicken cook evenly.
Rest before serving: After roasting, let the chicken rest for around 10 minutes to lock in the juices so the first cut is extra juicy.
